Elderflower Lemonade With Frozen Berries

Ingredients:
2 Lemons
[Caster] Sugar
35 ml Elderflower Cordial
1 Handful of Frozen Berries
Sparkling Water//Soda Water, fill to the top.

Instructions:
1. Squeeze lemon juice into a jug
2. Add sugar to taste
3. Add Elderflower Cordial
4. Mix until dissolved in.
5. Add in amount of ice desired
6. Slice remaining lemon and add into the glass
7. Add in the frozen berries
9. Top with sparkling water to taste and mix.

White Peach Cordial

Ingredients:
1 kg White Peaches
2 Vanilla Pods
250 g. [Golden Caster] Sugar
1 Lemon
Sparkling Water//Soda Water, fill to top.

Instructions:
1. Cut the peaches into halves and take out the seed/peach pit
2. Halve the vanilla pods lengthways and deseed
3. Place the peaches into a blender and blend until it turns into a purée
4. Put peach purée into a pan
5. Add sugar, lemon juice, and vanilla seeds into the pan and stir
6. Simmer over low heat and let it bubble for 20 minutes, or until a fine thick consistency forms
7. With a funnel, pour warm cordial into sterilised bottles or jars.
8. Seal and store in a cool-temperature environment and let chill until ready to use.
9. Add into glass once chilled, and fill to top with sparkling water//soda water.
10. Enjoy〜!
